Like many of you, my kidney health was suffering, and I found myself constantly battling painful calcium oxalate crystals. The only advice I received was to drink plenty of water and change my diet to avoid foods high in oxalates. This advice was ineffective for me by itself. I found the diet extremely difficult to maintain, as it was so specific and restrictive. I did not find an overabundance of resources that actually informed me of the amount of oxalates in a recipe, and for those where I did, many of the recipes had way too much salt and/or sugar in the recipe for those with calcium oxalate crystal challenges. So, as motivated as I was to prevent the recurrence of calcium oxalate crystals,I could not find a low oxalate diet plan that worked for me that I could maintain every day for the rest of my life.
Though diet alone has shown that it most often cannot handle all of one’s calcium oxalate crystal challenges, I knew it would help and I so wanted to enjoy life again! I set my sights on developing a significant number of low oxalate recipes that I could follow and would provide me with enough options so that I would never get bored and could enthusiastically continue to follow the diet each and every day for the rest of my life.
Out of this commitment and desire to help myself and others, I wrote this book, which includes 125 delicious low oxalate recipes and so much more. I know you will savor the recipes but, most importantly, I believe by following a low oxalate diet you will find relief and take one step towards never having to experience the awful calcium oxalate crystal stone experiences again.
