Ingredients
1 cup Unsweetened coconut milk
1 cup Fresh pineapple chunks (not canned, which is high in oxalates)
1/2 cup Unsweetened fresh coconut, shredded
1 tsp Ginger, minced or chopped
1 tsp Chia seeds
Instructions
- Peel and chop fresh pineapple.
- Peel and chop fresh ginger if using fresh.
- Combine coconut milk, pineapple, unsweetened shredded coconut, ginger, and chia seeds into a blender.
- Blend all ingredients for 30 seconds, or until it reaches desired consistency. Note: Can add a little ice if prefer a thicker, slushy consistency.
- Pour into glass and enjoy.
