Ingredients

1 cup Unsweetened coconut milk
1 cup Fresh pineapple chunks (not canned, which is high in oxalates)
1/2 cup Unsweetened fresh coconut, shredded
1 tsp Ginger, minced or chopped
1 tsp Chia seeds

 

Instructions

  1. Peel and chop fresh pineapple.
  2. Peel and chop fresh ginger if using fresh.
  3. Combine coconut milk, pineapple, unsweetened shredded coconut, ginger, and chia seeds into a blender.
  4. Blend all ingredients for 30 seconds, or until it reaches desired consistency. Note: Can add a little ice if prefer a thicker, slushy consistency.
  5. Pour into glass and enjoy.
